Ultra-luxury cruise line Seabourn has revealed details of its all-new fine-dining venue – Solis.
The restaurant, Seabourn says, celebrates the freshly prepared, sensational cuisine of the Mediterranean, with dishes, beverages and menus inspired by iconic destinations such as the Greek Isles and Rivieras. Solis has been developed by esteemed chefs, and long-time Seabourn partners, Chef Anton Egger and Frank Salein, who both have an extraordinary passion for fantastic food and travel.

Some of the tantalising dishes on offer at Solis include Piquillos De La Mama – Basque piquillo peppers with fresh Murcia goat milk cheese served on country bread crostini; Branzino – Whole Sea Bass baked in a sea salt and fresh thyme crust served with artichokes and tomatoes; Bistecca Alla Fiorentina – Tuscan-style grilled beef porterhouse steak; and Spiced Lamb Shank – Chargrilled smoked eggplant with tahini, pomegranate, roasted pine nuts, and labneh.
Solis will also serve vegetarian and vegan options and an indulgent new vintage cocktail menu, featuring classic drinks, such as Kir Royale, Negroni and Aperol Spritz, plus whimsical creations curated by masterful onboard mixologists!
Guests can sample Solis’ exquisite dishes and drinks on Seabourn Quest in January 2024. After this initial launch, Solis will be rolled out across Seabourn Encore, Seabourn Ovation and Seabourn Sojourn by Spring 2024.
