Merry Christmas Everyone! Here’s What I’ll Be Cooking Today!

Just wanted to wish all my clients and colleagues a very Merry Christmas today!

I’m cooking for 8 people this year, which is a lot more than I’m used to, so this morning I have my hands rather full!

It’s turkey and all the trimmings of course, and I do fancy myself as a bit of a wannabe chef, so I thought I would share with you the glimpses of magic  I will be cooking up in the kitchen today!

I have tried to be experimental this year, and have taken a lot of inspiration from the ships I have sailed with this year, Holland America, Fred Olsen and Cunard. Fingers crossed it all works out! Hopefully this menu will make everyone want to dine at Freddie’s for Crimbo!

Here is Freddie’s Christmas Day Menu:

Starter

Watercress & Cream Cheese Parcels Wrapped in Smoked Salmon, with a Lime & Sesame Dressing

or

Roast Garlic and Tomato Soup with Basil and Black Peppercorns

Main Course

Slow Roasted Turkey with a Bacon Skin, Stuffed with Lemon, Red Onion and Sage Stuffing

or

Slow Roasted Gammon with a Blood Orange, Honey and Clove Glaze

served with Roast Potatoes cooked in Duck Fat, Dill Infused Sweet Potato Mash, Orange Glazed Roasted Carrots, Brown Sugar Roasted Parsnips, and sauteed Sprouts with a Chorizo and Pine Nut jus

Warm Triple Chocolate Gateau with White Chocolate Sauce & Raspberry Compote

or

Home Made Cupcakes (from my sister – one of my diners)

and/or

Man Sized Blue and Smoked Cheeseboard with Salted Crackers

Wow, when I write it down it sounds like a lot of work, but it’s actually relatively straight forward, I have done some of the prep already so hopefully I can pull it off and impress my guests this year.

Christmas is hugely important to me, so I feel its best to really go for it and pull out all the stops!

Like what you read? Or is it too much? My other half seems to think I have bitten off more than I can chew. But it’s here family we are feeding mainly, so they are basically my guinea pigs!
