Favourite Foods from your Travels………….

It is quite usual on a cruise ship to find regional specialities from the port you have visited that day on the menu at dinner, which is a great opportunity to try things you wouldn’t normally have at home. As you may have noticed, I love all things food so I am always ready to try something new, and I love trying to re-create these dishes when I get home – much to the teenagers horror at times!

A real favourite when I was on the Fantasia was the Morrocan Lamb Tagine we had as we sailed out of Tunis one afternoon – sat on deck, in the sun – Lab, Apricots, raisins and cous cous. Absolutely delicious!
On a recent visit to The Netherlands I discovered a yummy little biscuit called Speculaas that the Dutch traditionally eat on 5th December, St Nicholas Eve, served with mugs of hot chocolate. I managed to buy the special spice mix on the internet from a company called typicaldutchstuff.com, and this afternoon I’m having a go at baking some. I’ve made the dough and it is now resting in the fridge for a couple of hours to let the spices work their magic before I bake them. I’ll let you know how they turn out later. Normally these little biscuits are pressed into a windmill shape before baking but as I don’t have one of those at hand the old mince pie cutter will see some early July action today.
