Eggs Benedict – the finest breakfast at sea?

 

It’s always good to try new experiences on your travels, and of course with me this usually means food!! I have done many cruises and been on many different cruise lines over the years and one of my favourite larger ships remains to this day Celebrity Equinox. A beautiful ship, excellent facilities and outstanding food, something that is always guaranteed to sway my judgement. Feed me well and I am happy, simples!

I do like to start the day off on the right foot with a good breakfast inside me and as I headed to the buffet restaurant on Equinox I was not to be disappointed. After surveying the many offerings I settled on Eggs Benedict. Beautifully hand-carved, maple cured Canadian Ham sat on top of freshly baked muffins and topped with delicious poached eggs, drenched in Hollandaise Sauce. What could be finer? It did not disappoint!

This in mind, I thought I would have a bash at making my own this morning, although I must be honest the muffins and Hollandaise were courtesy of one of our leading supermarket chains, as was the thickly sliced ham. I got the recipe from good old Delia, one of her ‘cheat’ recipes which recommends the use of ready made Hollandaise so if it’s good enough for Delia then it’s good enough for me. What a treat for a Sunday morning, although my eggs were a little overdone, poaching not being one of my strong points. It was none the less extremely enjoyable!
