      The idea originally was to awaken the senses in the mouth so you can appreciate all the flavours that are to follow, the same way a sorbet is to cleanse the pallet before your main course. These days though, chef's use this as a way of showing off their talents. I've served them in many restaurants and always got good feedback, but would not describe it as a course.
