Regent Seven Seas Officially Holds The Largest Speciality Restaurant At Sea

Regent Seven Seas Cruises is transforming its signature restaurant, Compass Rose, into the largest speciality restaurant at sea. This is revolutionising its gourmet dining experience fleet-wide.

The new concept for Compass Rose will offer a new menu that features an unprecedented, fully customized epicurean experience with a variety of gourmet options unequaled by any other ship. The main dining experience will be completely transformed and will bring together two hallmarks for Regent Seven Seas Cruises: exquisite gourmet dining and unrivalled personalised service.

Guests can expect an endless combination of dishes to choose from in this bold, innovative new culinary approach, including a choice from a dozen different meat, fish and seafood items. Additionally, every evening the ship’s executive chef will create nightly specials that will add more than a dozen mouthwatering appetisers, pasta dishes and entrée choices to the menu.

‘Our culinary team has created a truly extraordinary dining experience for Compass Rose with a degree of customization and variety typically reserved for more intimate speciality restaurants’, said President and Chief Executive Officer for Regent Seven Seas Cruises, Jason Montague. ‘We tested this new menu concept on a couple of test cruises over the summer and our guests absolutely love it’.

The menu for Compass Rose is divided into two equal portions; the left-hand side provides guests with the ability to entirely customise their dinner, whilst the right-hand side feature’s the executive chef’s nightly specials, as well as a multi-course ‘menu degustation’. The customisable selection of the menu means guests can pick from a list of high-quality entrees like lobster, shrimp, salmon, or speciality cuts such as New York strip steak and veal medallions.

Once guests have made their selection, they can determine how they would like it prepared- grilled, baked, poached or roasted- and can then select from a complimentary list of sauces to garnish the dish, such as madeira-truffle, green peppercorn and hickory barbeque. From there, guests can choose from more than a dozen side items that range from Lyonnaise potatoes, to sautéed spinach to sweet potato fries.

To complete the meal, Compass Rose will offer an entirely separate dessert menu with international cheeses, premium handmade ice creams and delectable pastries, cakes, crumbles and soufflés.

‘The culinary teams on our ships have always been able to cater to our guests’ special culinary desires with advanced notice’ said Bernhard Klotz, senior director of culinary for Regent Seven Seas Cruise. ‘The new Compass Rose menu is so encompassing and customisable that guests with special dining requests no longer need to make them in advance, our chefs can prepare whatever their heart’s desire a la minute’.

Seven Seas Navigator, Seven Seas Voyager and Seven Seas Mariner will also have their lunch menu reinvented. In celebration of the launch of Seven Seas Explorer, Compass Rose on the line’s other ships will feature lunch selections from the three speciality restaurants on Explorer– Prime 7, Chartreuse and Pacific-Rim.

Guests on Seven Seas Explorer and Seven Seas Navigator were treated to a preview of the Compass Rose menu during the multi-week test period. The menu is scheduled to officially debut November 9th of 2016 on Seven Seas Voyager and Seven Seas Mariner on May 13th in 2017.
