It's an excellent idea to visit Sofiero in Helsingborg. The adress is: Sofierovägen 57 in Helsingborg. Adm. SEK 80 (adults), normally open 11 a.m. - 6 p.m. There is a bus departing from the harbour, stop "Hamntorget". If you prefer to do Copenhagen on your own you can walk from the free port, where the Grand Princess will dock, about 10-15 minutes to NORDHAVN lokal train station and take the train from there to anywhere in the metropolitan area. To the Tivoli Gardens about 10 minutes. Buy tickets at the station ("Kort & Godt-shop).

Shuttle bus information. In Oslo the cruise dock is adjacent to the Town Hall in the centre of the city so no shuttle bus. In Copenhagen there may or may not be a shuttle bus depends on where the ship docks. At Zeebrugge there will be shuttle buses to take you to Blankenberge. It drops you adjacent to the station where you can get the train to Bruges ( about 5-6 euros return). Helsingborg is a tender port so no shuttle bus. Be prepared to bypass if the sea is slightly rough as we did two years ago.

Further to my previous answer I have checked Belgian railways website and found that on Sundays trains commence from Blankenberge Station at 7.10AM and from then on hourly at ten minutes past the hour. The train actually goes to Brussels but stops at Bruges which is only about 15 minutes away. You will have to ask at the station for the return train time. If you have not been to Bruges before the city is about ten minutes walk from the station. Hope you find this useful.

Sorry cannot give you a definitive answer as we were there mid week. All i can say that they are hourly during the week. Suggest that you ask at the shore excursion desk on board.
