A lot depends on which cruise line you go with and how far in advance you book. Personally I cruise with P&O, and have paid varying supplements from 0% to 60%, and I have found the best deals for singles are only available if you book when the cruise brochure first comes out. Usually the lowest single supplements are in the later months of the year, October, November and early December. I have looked at other cruise lines, some of whom have single cabins like Fred Olsen, but have found it difficult to beat the price I can get from P&O.
