Depends on the number of days you are on the ship if more than 9/10 but less than 14 then there will be 3 formal nights usually the first the evening after you leave port and the last the 2nd last night before you arrive back at the port where you will fly home from with the other somewhere in the middle, but you will find that date when you get the info when you join the ship.

To answer your alternative restaurant question it's cover charge only, & that goes for all the major cruise lines.
