As you can see from the exchange rates below either US or AUS are acceptable (and NZ) Most small countries like to accept the strongest courency so check what the rates are on the internet as you go. Read your brochure, as i beleive that sailing out of Aus ports are under the Princess Australia banner. There fore the on board currency is the Australian Dollar.
