You don't say exactly where you are going but the US $ is accepted almost everywhere in The Caribbean Central and South America except Cuba where the Local Currency is the CUC. I don't think that you will able to purchase this except in Cuba itself. As regards excursions if you do not use the Ship's excursions [they can be pricey] you may well have to rely on local Taxis and as such you must agree a price with the driver before travelling. If you do venture into Panama City stay clear of the old quarter it can be quite intimidating.

If you have a facebook account you may want to check out a Discovery 2 closed user group on Facebook. There are many similar questions to what you have asked, which have been answered by many people who are either past or present cruisers. You will need to join the group which is very easy. I found a lot of interesting information on this site.

You will need to exchange money to Cuban CUC. DO NOT EXCHANGE US$. There is a money exchange in the terminal being government run offer the same as the banks. Online it gives the idea that 1 CUC equals $1. On the day $1 = 0.97CUC but then there a 10% surcharge on US$ so you only receive 0.87. Whereas exchange £1 GBP exchanged at 1.31CUC. There is no ATM in cruise terminal and are limited around Havana.
